Just a heads up out there - I recently passed my VCP exam, and in part of the process I created my own SAN to test out the various connections and scenerios required.
I built my own server, and use software from www.OpenFiler.com
Openfiler 2.99
It's FREE - as in $0
It's a linux OS that gets loaded onto modest hardware.
**BTW if you load it onto better hardware you will have a pretty decent SAN for productions or testing**
Setup and maintenance/configuration is via a web interface.
Very easy to setup and use.

It's great for studying for the VCP because it does:
iSCSI
Fiber Channel FC
NFS
CIFS
HTTP/DAV
FTP
rSync
**All at the same time** You don't have to tear down servers and reconfigure them - setup and run these all at the same time!
Everything you will need to test things out on the cheap.
Don't buy the added module for the GUI interface into the FC portion - it can all be done via the command line for free.
Great program - very stable and easy to use.
Great even if you want to again do a production SAN on the cheap, or even as a proof of concept for an infrastructure project.
The only things it doesn't do is FCoE and Converged Networks.
